Veggie Nachos

Healthy bell pepper veggie nachos, that will want you coming back for more while leaving you feeling guilt-free and satisfied. Try these for lunch, dinner or a snack.

When you take bell peppers and slice them, layer them on a sheet pan, decorate them with “extras”, you get yummy bell pepper nachos. They make the perfect snack or dinner!

This recipe is super easy to make, doesn’t require much prep time if your cheese is already grated, and they are very filling.

HOW TO MAKE BELL PEPPER VEGGIE NACHOS

Bell peppers, chicken, BBQ Sauce, Cheese, Green Onion, Etc.

For this recipe I used leftover chicken {you could also use leftover ground meat or beef, or cook some} chopped and tossed in some BBQ sauce.

I like to cook the bell peppers a little before I decorate them with all the goodies and melt the cheese.

For this recipe, you actually roast the peppers before making them into nachos. Roasting softens the peppers a little but also browns them up.

CARBS EARLY IN THE DAY

I try and have all my carbs early on in the day, meaning supper time is all about veggies and protein. However, this all depends on when my workout is, morning or evening.

You can get pretty creative with all kinds of vegetables out there to make some delicious carb-less recipes. From cauliflower rice, zucchini noodles, spaghetti squash, the list goes on.

I think it is important to get creative with veggies, to keep them interesting, fun and tasty.

Veggies don’t need to be boring, they can be super fun if you dress them up the right way… and make them look appetizing.

Add some of your favorite spices, sauces, etc. Just don’t go overboard, add enough sauce for a little flavor. A little can go a long way, especially if you water it down a little.

Dip these yummy nachos in some salsa, guacamole and/or plain Greek yogurt.

Ingredients

  • 1 cup cooked bbq chicken or taco beef
  • 2 large bell red, yellow, or orange bell peppers
  • 4 green onions
  • 2 tbsp Olive oil, extra virgin
  • 1 1/2 cups shredded cheese
  • 1 serving salsa and plain greek yogurt or sour cream, garnish/dip
  • * addition toppings to consider: olives, jalapeno, red onion, tomatoes, etc.

Instructions

  1. Preheat the oven to 375 F.
  2. Line a baking sheet with parchment paper.
  3. Prepare bell peppers by rinsing, and removing seeds.
  4. Cut the bell peppers into quarters.
  5. Drizzle with the olive oil, and evenly spread olive oil on the bell peppers using a kitchen brush.
  6. Bake bell peppers for 6 mins, remove and flip, baking for another 6 minutes.
  7. Add on all your toppings, starting with your cheese.
  8. Bake for an additional 4-5 minutes.
  9. Remove from oven, and let cool for five minutes before serving.
  10. Enjoy!
