This hearty hamburger soup with macaroni {crockpot} is the perfect comfort food on a chilly day, any time of year! This dish is made easily using an all-in-one crockpot to keep the cleanup easy.

From its warmth and its intense flavors, this hearty hamburger soup is perfection. My family absolutely loves this meal, so much so, we make it weekly.

The richness of the broth combined with the textures from the meat, vegetables, and pasta will leave your taste buds cravings for more.

Ingredients needed to make hearty hamburger soup.

INGREDIENT NOTES

  • Ground beef: Ground beef is used for this recipe for some great protein.
  • Olive oil: To brown and sauté the beef, we use olive oil.
  • Onion: Onion adds some great flavor and texture to this hamburger soup.
  • Garlic: To bring out the flavor even more, fresh garlic will add some great taste.
  • Diced tomatoes: For some added texture and flavor, an entire can of diced tomatoes in Italian seasoning is used.
  • Tomato soup: To add more depth and richness to this soup, we use an entire can of tomato soup.

  • Beef broth: For some great flavor, we use beef broth in this soup recipe.
  • Frozen mixed vegetables: To make this recipe easier, we use frozen mixed vegetables like green beans, corn, peas, and carrots.
  • Worcestershire: For a little sweet and sour, Worcestershire adds some great complexity and depth.
  • Ketchup: Ketchup adds some thickness and sweetness to this hamburger soup recipe.
  • Elbow macaroni noodles: Any small variety of pasta will do, but we enjoy elbow macaroni noodles the best.
  • Parsley/basil: Both parsley and basil are used to help perfectly season this soup recipe. 

STEP-BY-STEP INSTRUCTIONS

  • Heat a medium-sized skillet at medium heat, and add garlic and onion. Sautee for 2 minutes.
  • Add in fresh ground beef.

  • Cook meat until cooked through and juices run clear.
  • Prepare your crockpot or Dutch oven with all remaining ingredients EXCEPT the noodles. Set the crockpot to high or your Dutch oven to low-medium.
  • Once the meat is cooked add it to the crockpot or the stock pot.
  • Leave the crockpot on high and cook for 4 hours and then add the noodles after 3.5 hours. If using a Dutch oven simmer the soup on low-medium heat for 45 mins. Add noodles and simmer for another 8-10 minutes, until noodles are tender.
  • Serve in soup bowls and garnish with parmesan cheese and a side of garlic toast or garlic fingers.

EXPERT TIPS

Brown the beef: Always make sure you brown the ground beef beforehand. Not only does this ensure that the meat is cooked through but it ups the flavour. Browning the meat helps caramelizes the taste.

Add the macaroni at the end: Don’t add the macaroni until the soup has cooked for 3.5 hours. You don’t over cooked pasta noodles. A half-hour will do the trick when cooking this soup in the crockpot!

SERVING TIPS

Some of my family’s favorite ways to serve hamburger soup include garnishes, additional spices, and a side such as bread.

Parmesan cheese: when serving hamburger soup, we like to serve ours with a garnish of parmesan cheese. It adds such a nice additional cheesy touch to this already tasty homemade hamburger soup recipe.

Extra herbs: A garnish of fresh parsley also adds a nice little flavor boost.

Garlic toast/garlic fingers: We love to serve our hamburger soup with garlic toast or garlic fingers. Garlic fingers are the most popular choice for our family. Dipping those cheesy fingers into the broth of the soup will have your taste buds wanting more!

STORAGE TIPS

When it comes to storing leftover hamburger soup, ensure that the soup has cooled completely to room temperature before storing. Transfer leftover soup to airtight glass or plastic containers, or resealable Ziploc bags.

Refrigerate for up to 3-4 days for the best quality. Leftover hamburger soup is almost better leftover. The herbs and spices get more of a chance to marinate entirely throughout the soup.

FREEZER INSTRUCTIONS

This slow cooker hamburger soup is also freezer-friendly! Ensure that the soup has cooled completely to room temperature before transferring to the freeze. Using a freezer-safe airtight container or Ziploc bag fill the containers/bag until 2/3 full, leaving room for expansion.

Freeze the soup for up to 3-4 months to maintain freshness. To thaw simply remove the hamburger soup portion from the freezer, thaw overnight in the fridge, and reheat on the stove top or microwave.

HOW TO PREP AHEAD

You can easily prepare this easy hamburger soup recipe ahead of time. Simply pre-cook the ground beef, let cool and store in an airtight container in the fridge.

Measure the spices, cover and set aside on the counter top.

Measure out the frozen mixed vegetables, refrigerate.

Measure out and combine all the wet ingredients into a mixing bowl, cover and refrigerate.

Measure out the macaroni, cover, set aside on the counter top.

Once you are ready to add everything to the crockpot, set it up on high, add in your beef, the liquid ingredients, and the vegetables and follow the rest of the crockpot cooking instructions in the recipe card below, leaving the macaroni for last.

VARIATIONS & SUBSTITUTIONS

You can also cook this hamburger soup on the stove top as well. I recommend using a Dutch oven to help keep this an all-in-one pot meal.

To cook this soup in a Dutch oven simply sauté your beef until cooked all the way through add in all remaining ingredients except the macaroni and bring to a simmer for 45 minutes, add in your noodles and cook for another 8-10 minutes until your macaroni is cooked the way you like it!  

You could also use rice or potatoes instead of macaroni noodles, or another type of pasta.
