I enjoy sweets. Sweets of all kinds, especially with my afternoon coffee. It’s a thing for me, afternoon coffee is always accompanied by a sweet treat. Lemon Blueberry Oat Squares came to life in my kitchen thanks to my husband’s love of anything lemon and blueberry flavoured.

This Lemon Blueberry Dessert recipe has spring written all over it! It is light and just the perfect little sweet treat that won’t leave you feeling bloated or like you should’ve skipped dessert. Also, it is pretty easy to make… which is a bonus in my world!

This Easy Lemon Blueberry Square recipe, is the perfect quick make-ahead dessert. The only baking part of this recipe is the oat cookie crumb. I bake it to give a nice cookie crumble texture, with every bite. As for the rest of the ingredients, they just fall into place.

You will need 7 ingredients to make this Lemon Blueberry Dessert.

  • Oat flour
  • Sugar
  • Sea salt
  • Butter
  • Blueberry pie filling
  • A carton of whipping cream, full fat
  • Fresh lemon

CAN YOU USE ANOTHER FRUIT

For this Easy Lemon Blueberry Oat Square, you could use another fruit depending on the season or what you like best. You could try apple pie filling and top the top layer with cinnamon and a drizzle of caramel sauce, or you could try cherry pie filling as well! Instead of lemon, you could also use fresh orange or grapefruit juices.

HOW TO MAKE EASY LEMON BLUEBERRY SQUARES

  1. Preheat the oven to 400°F.
  2. Prepare oats by grinding in a grinder into fine flour.
  3. In a mixing bowl add your oat flour with 3 tablespoons of sugar and a pinch of sea salt. Sift together.
  4. Incorporate your melted butter. Mix in the butter until the oat flour and butter mixture becomes a cookie crumble.
  5. Press cookie crumble into a 9×5 square baking dish, evenly.
  6. Bake for 14-16 minutes until the cookie oat base has browned a little.
  7. Once it’s baked, remove it from the oven and let it cool completely for approximately one hour.
  8. Once the oatmeal cookie crumb has cooled, evenly layer blueberry pie filling.
  9. Zest the peel of your lemon, set aside.
  10. In a mixing bowl using a hand mixer, mix together whipping cream, the juice from a whole lemon and the remaining sugar.
  11. Whip until it comes together forming nice peaks with the beaters.
  12. Evenly spread the whipped topping over the blueberry pie filling and place it into the dish in clumps.
  13. Use the back of a soup spoon and evenly spread the whipped mixture over the blueberry pie filling.
  14. Top the whipped mixture with lemon zest. Chill for one hour. Cut into squares and serve.

  • 1/2 cup of butter, melted
  • 1 cup of blueberry pie filling
  • One 473 mL carton of whipping cream, full fat
  • 1 Large fresh lemon and zest
