Low-Carb Taco Bowl

A tasty low-carb taco bowl with a little crunch and all the flavor. Enriched with fresh greens, taco seasoned beef, salsa, Greek yogurt, cheese, and lime, the combination of flavors will have you coming back for more.

This is my go-to quick lunch! As a busy mom of 2-under-2, a low-carb taco bowl is perfect. I always find that the mornings go by so fast! Between breakfast, naps, getting a workout in while my toddler joins the fun and everything in between I feel like before I blink it is lunchtime.

I always have prepared taco beef on hand to make a quick taco salad. I find this salad never gets old because you can constantly switch it up from low-carb to adding in those EXTRA Tostito chips and enjoying that crunch.

HOW TO MAKE A LOW-CARB TACO BOWL

Here is what I have to say about the “carb” part. Take your carbs or leave em’. Yes. Take em or leave em’. Honestly, I am all about simplicity and enjoying the foods in life.

You decide if you want to make the salad a low-carb taco salad or add in the glorious chips.

You will need:

  • Lean Ground Beef
  • Taco Seasoning
  • Fresh Lime
  • Salsa
  • Greek Yogurt
  • Green Onion
  • Shredded Lettuce or Spinach
  • Shredded Cheese
  • Tostitos

HOW TO MAKE VARIATIONS OF TACO BOWL

There are so many different ways to make a low-carb taco bowl. Here are some different variations of my family’s favorite ways to enjoy our taco salad.

  • Baked Tortilla Bowl
  • Wraps
  • Tostito Chips
  • Tortilla Strips (a wrap cut into strips, baked until crispy)
  • Tortilla Triangles

Get creative there are so many different ways to enjoy this dish!

HOW TO BEST SERVE LOW-CARB TACO SALAD

This low-carb taco bowl recipe is best served just as this recipe suggests. It makes the perfect lunch. I like to re-heat the meat, add the cheese to it so it melts, and toss it on top! Yum! If you want to add in some carbs I personally enjoy the Baked Tortilla Bowl.

HOW TO ASSEMBLE YOUR TACO SALAD

When preparing your taco salad you always want to start with your base, which will be your lettuce or spinach. If you aren’t keeping it low-carb and you choose to have the tortilla bowl, that will be your base followed by your lettuce.

As for the other toppings… I like to add them around the side of the plate or bowl and then mix everything together. This salad just looks pretty!

TACO BOWL TOPPINGS

Some additional topping ideas for a taco salad bowl include:

  • Fresh Cilantro
  • Black Beans
  • Red Onion
  • Bell Peppers
  • Pico De Gallo
  • Sour Cream
  • Black Olives
  • Jalapeno’s

HOW TO MEAL PREP LOW-CARB TACO BOWLS

This salad recipe is perfect for meal prep. I typically always have taco meat pre-cooked and seasoned, frozen in portions in the freezer in a Ziploc bag.

If you don’t have meat prepped ahead. Cook meat in the taco seasoning. Let it cool and portion out into 5 portions, that is usually what I get out of a 1 lb pack!

Store the meat in a Ziploc bag. Prepare the rest of your ingredients by chopping the lettuce (if it isn’t already) and dividing it out into a large rectangle container.

Cut and prepare the rest of your ingredients and portion in Ziploc bags or small sauce containers that will fit in your large container with the lettuce.

Add all the bagged ingredients to your large container and you are good to go! Grab and go lunch is served!
