Life is pretty busy around here, with my oldest in school, activities, and everything in between, the weeks fly by, and so do the days.

One easy-to-clean-up and make dish is this Pineapple Sheet Pan Chicken. I serve it with rice and it is a huge hit!

CAN I PREPARE PINEAPPLE SHEET PAN CHICKEN AHEAD OF TIME

Yes, you can prepare this sheet pan chicken dish ahead of time. I like to make up the sauce portion and set it aside in a small container in the fridge. Pre-chop my vegetables, put them in a container, and refrigerate. And pre-cut the chicken, add it to a Ziploc bag, and refrigerate.

WHAT GOES IN SHEET PAN PINEAPPLE CHICKEN

  • Chicken Breast
  • Red, Yellow, and Orange Bell Pepper
  • Red Onion
  • Zucchini
  • Fresh Pineapple
  • Canned Pineapple Tidbits with Juice
  • Pineapple Sauce (VH brand)
  • Packed Brown Sugar
  • Lemon Juice
  • Montreal Chicken Spice
  • Garlic Powder
  • Salt
  • Pepper
  • Sesame Seeds

HOW TO MAKE PINEAPPLE SHEET PAN CHICKEN

  1. Preheat the oven to 425 F.
  2. Open to large Ziploc bags.
  3. Prepare vegetables and pineapple by slicing and cubbing as said in the ingredients list. Add to 1 Ziploc bag
  4. Prepare chicken breast into cubes. Add to another Ziploc bag.
  5. Mix together in a small mixing bowl the canned pineapple, pineapple sauce, brown sugar, lemon juice, Montreal spice, garlic powder, salt, pepper, and 1 tbsp sesame seeds.
  6. Add half of the mixture into a Ziploc bag with the vegetables, and the other half of the mixture with the chicken. Toss each bag so everything gets a good coating.
  7. Line a baking sheet with Parchment paper.
  8. Open both bags and dump them onto the sheet pan and spread the chicken and vegetables out evenly.
  9. Cook for 15 minutes.
  10. Remove from oven, toss/flip chicken and vegetables. Cook for another 12-15 minutes until the chicken reaches an internal temperature of 165 F.
  11. Remove from oven, top with some sesame seeds and serve with rice.

WHAT TO SERVE WITH PINEAPPLE SHEET PAN CHICKEN

  • 3 fresh chicken breast, cubed
  • 1 1/2 cups red, yellow and orange bell pepper, cubed
  • 1/2 cup red onion, sliced
  • 1 small zucchini, cubed
  • 1 cup fresh pineapple, finely cubed
  • 1 398 mL can pineapple tidbits with juice
  • 1/2 cup pineapple sauce (VH brand)
  • 1/4 cup packed brown sugar
  • 1 tbsp lemon juice
  • 1 tbsp montreal chicken spice
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp sesame seeds

Instructions
