There is something about a warm creamy potato salad that goes with anything, especially a healthy warm potato salad that is low-fat, made without mayo, spiced with dill and sweetened naturally. This recipe is creamy and makes for a great side dish.

This easy potato salad recipe is great served with chicken, pork or beef. If I am going to pick any carb salad at the buffet line, it’s either pasta or potato. But, if this dill potato salad is in the line, I am totally picking this one. I can’t believe the carb lover in me just said that. But, this warm potato salad is SO good!

Warm creamy potato salad is served warm and spiced with herbs. While most potato salads contain mayo, Dijon mustard, dill, egg and bacon, this healthy potato salad tops the charts with its creamy texture from one of the main ingredients, Greek yogurt and LOTS of dill.

WHAT GOES IN HEALTHY WARM POTATO SALAD

A few simple and healhty ingredients.

To make this healthy warm potato salad you will use plain Greek yogurt instead of mayo or any heavy creams. This recipe also calls for a generous amount of dill, and trust me, it is so good. I sweetened this recipe naturally using pure maple syrup and it gives this dill potato salad some great added flavour.

HOW TO MAKE DILL POTATO SALAD

Simple steps, a little time and the perfect dish.

Dill potato salad can be served in approximately 30 minutes.

  • Preheat oven to 375F.
  • Line a baking sheet with parchment paper.
  • Halve potatoes, and toss in 2 tbsp of olive oil, salt, and pepper.
  • Bake for 20 mins. Remove from oven, toss and bake for 8 minutes.
  • Prepare the dressing starting with Greek yogurt, sour cream, chives, dill, maple syrup, parmesan cheese, salt, pepper, cheddar cheese, and lemon juice. Mix everything together until combined.
  • Once potatoes are cooked, add to a heat-safe bowl, add in the dressing and mix everything together until combined.

Ingredients

  • 1 small bag Mini Potatoes
  • 1 tsp Dried Dill
  • 4 tsp Dried Chives or Green Onion
  • 1/2 cup Plain Greek Yogurt
  • 1/2 cup Sour Cream
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Pure Maple Syrup
  • 1/4 cup Parmesan Cheese
  • Sea Salt to taste
  • Black Pepper to taste
  • 1/2 cup Cheddar Cheese
  • 1 tsp Lemon Juice

Instructions
