Creamy, herbed and tasty.

Warm creamy potato salad is served warm and spiced with herbs. While most potato salads contain mayo, Dijon mustard, dill, egg and bacon, this healthy potato salad tops the charts with its creamy texture from one of the main ingredients, Greek yogurt and LOTS of dill.

A few simple and healhty ingredients.

To make this healthy warm potato salad you will use plain Greek yogurt instead of mayo or any heavy creams. This recipe also calls for a generous amount of dill, and trust me, it is so good. I sweetened this recipe naturally using pure maple syrup and it gives this dill potato salad some great added flavour.

Simple steps, a little time and the perfect dish.

Dill potato salad can be served in approximately 30 minutes. To speed up the roasting time to get the perfect texture on the potatoes you will parboil them first.

  • Preheat oven to 425F.
  • Halve potatoes, add to a pot for boiling and boil potatoes in water for 10 minutes.
  • Once potatoes are boiled, drain off the water, toss in 1 tbsp of extra virgin olive oil, and toss the potatoes to evenly cover. Add to a sheet pan prepared with parchment paper and bake in the oven for 22-25 minutes, until golden brown. Set that pot used to boil aside, you’ll need it again.
  • Prepare the rest of the ingredients by measuring and mixing everything together in a small mixing bowl.
  • Once potatoes are roasted, add back into the pot, add in the yogurt mixture, and combine everything together. Once combined add the warm potato salad into a heat-safe serving dish and serve immediately.
