A quick and easy recipe, using sweet potato as a side dish, roasted and paired with a guilt-free dipping sauce.
I love everything about quick and easy dishes, and being in my kitchen either baking or cooking, I love it all! Most recently I whipped up some delicious roasted sweet potato, and they were a huge hit {hubby approved}!
While I still love regular potatoes, there is something about sweet potato that has kinda taken over as a side dish. Add a little seasoning, like chipotle, and BOOM, delicious!
HOW TO GET USED TO SWEET POTATO
Get creative with the seasoning, preparation and style of it.
It took both me and my husband a few taste tests of trying new recipes to get used to the texture of the roasted sweet potato. Now, we actually love this as a side dish!
Some other ways to try it are boiling, and mash with a little butter, cinnamon, and coconut sugar! Delicious. I will share that recipe soon! Adding a little cinnamon to sweet potato totally adds a little kick of spice, which offsets the taste of it.
IS IT NECESSARY TO PEEL SWEET POTATO
Ensure you wash and scrub the peel well.
It is totally okay to keep the peel/skin on. I find the skins give the roasted potato an extra crunch. If you wanted too, you could run your veggie peeler over the potato and remove a thin layer of peel. The skin also contains some great sources of vitamins and nutrients.
The only time I’d remove the skin is if I were boiling it. With any potato that I boil, I remove most, if not all of the skin. However, it is ok to leave the skin on, just wash it well.
WHY THIS RECIPE KEEPS ME COMING BACK
The options are endless on what you can do with these roasted sweet potatoes.
I enjoy these with grilled chicken or steak preferably! I also use leftovers as a salad topper, yum! These sweet potato cubes also go nicely as a topper on this spinach salad.
This recipe takes very little time to prepare and bake. It makes the perfect side dish with any meal, and with its little kick of spice, it will have your taste buds popping.
Sweet Potato Dip
Serve with this Spicy Dip.
Recipe:
1/3 cup of Plain Greek Yogurt
1 Small Squirt of Sriracha Sauce or 2 tbsps. Thai Chilli Sauce
Mix well and serve.
Roasted Sweet Potatoes

A quick and easy recipe, using sweet potato as a side dish, roasted and paired with a guilt-free dipping sauce.
Ingredients
- 1 Sweet potato, large
- 1 tsp Chipotle Mrs. dash seasoning
- 1 sprinkle of Pink sea salt
- 1 tbsp Olive oil, extra virgin
Instructions
- Preheat the oven to 375 F.
- Line a baking sheet with parchment paper.
- Cube up your sweet potatoes, rinse, pat dry, and toss in a mixing bowl with oil, salt, and spices.
- Bake for 15 minutes.
- Remove from the oven, flip/toss, and bake for another 14-18 minutes.
