A rotisserie chicken ends up on our meal plan, at least once a week! They make a great dinner, they are premade, healthy and the perfect grab-and-go meal. You can put any leftovers to good use from salads to even soup.
I love a good, balanced and healthy lunch. And I LOVE a good salad!
HOW TO PUT TOGETHER A SALAD
Greens, quinoa, salad dressing, bell peppers and more.
I like to toss random things together, get creative and use up what’s in my fridge like leftover rotisserie chicken from supper the night before.
For this recipe, I used leftover chicken, a container of quinoa that I had in my pantry {already cooked}, random veggies from my fridge, and came up with this yummy, favourable salad.
I absolutely love Bolthouse farms salad dressings. I used their balsamic dressing for this salad. But that one also makes a great marinade/sauce on a stir-fry!
I also love the premade/prepackaged quinoa! They are great to grab and go as a lunch, they make the perfect side, and amazing addition to a salad to create a perfect balance with added protein!
When it comes to putting together a salad like a rotisserie chicken salad, it is about putting together the veggies you love, getting creative and making sure that what you are putting on your plate is something that you are going to enjoy.
When thinking about the layers, always start with your base, which is what will make up most of the dish. For example, your greens. I like to use spinach, it is one of the best superfood toppers on my list.
The next thing I think about is what I want to add to give more flavour and texture. Think of veggies that are crunchy, crispy, and sweet. I like to add vegetables such as bell peppers, red onion, cherry tomatoes, and cucumbers.
I like to sometimes add in avocado, slivered almonds or black olives. And I really enjoy adding in quinoa for some added protein, texture and a great source of carbs.
