Healthy Peanut Butter Cookies

A peanut butter cookie that will leave you wanting to come back for more, made with only 5 ingredients and leaving you guilt-free.

Peanut butter is my favourite food group. Yes, I said, food group! All jokes aside I love peanut butter. I eat it by the spoonfuls. #secretindulgence

I love a freshly baked peanut butter cookie that’s soft but chewy, with my afternoon coffee. If you are new here, then I must share, I love something sweet with my afternoon coffee. I try and make most of my recipes as “clean” as possible. When I say clean, I mean healthier ingredients.

This recipe doesn’t take much time to put together and bonus, you don’t dirt up very many dishes in getting these made. I wanted this recipe to be one that I keep coming back to. I added flour to this recipe to give the cookies more “fluff”.

For this recipe, I went with whole wheat flour, and I used coconut sugar. If you wanted to add some extra sweetness to these cookies, you could also add some dark chocolate chips. If you didn’t want to add chocolate chips, you could always add in some chopped peanuts.

Peanut Butter Cookies

Peanut Butter Cookies

A peanut butter cookie that will leave you wanting to come back for more, without any guilt.

Prep Time 8 minutes
Cook Time 14 minutes
Additional Time 15 minutes
Total Time 37 minutes


  • 3/4 of a cup of creamy peanut butter
  • 1/2 of a cup of coconut sugar
  • 1/2 of a cup of flour {I used whole wheat for this recipe}
  • 1 tsp of pure vanilla extract
  • 1 large egg
  • Optional: 1/2 of a cup of dark chocolate chips


  1. Preheat oven 350 degrees Fahrenheit.
  2. In a medium mixing bowl, mix flour, sugar, and peanut butter together until well combined.
  3. Beat egg and vanilla in a small soup bowl.
  4. Mix egg mixture into peanut butter mixture, mixing until combined.
  5. *add in chocolate chips if you are using them, by blending them in,*
  6. line a baking sheet with parchment paper.
  7. Roll cookies into a ball and place evenly on baking sheet {3 wide and 4 lengths wise}.
  8. Press cookies down with a fork to flatten them out a little.
  9. Bake for 12-14 minutes.
  10. Remove from the oven and let cool for 5 minutes.
  11. Place on a cooling rack to let cool for another 10 minutes.
