Lazy Lasagna Soup

One thing I love about this recipe is that it is a one-pot dish. Throw everything into your castiron pot and VIOLA! Dinner is served.

WHAT IS LAZY LASAGNA SOUP

Lazy Lasagna Soup is made using flat sheet pasta. Lasagna soup also contains a tomato and meat broth with cheese and lots of spices. Just like lasagna, this lasagna soup contains three components. A rich meat sauce, pasta, and cheese.

WHAT GOES IN LAZY LASAGNA SOUP

Here is what you’ll need for this lasagna soup recipe:

  • Olive Oil
  • Ground Beef
  • Onion
  • Minced Garlic
  • Salt
  • Pepper
  • Brown Sugar
  • Italian Seasoning
  • Parsely
  • Marinara Sauce
  • Beef Broth
  • Water
  • Broken Lasagna Noodles or Fusili Pasta or Maflada Pasta
  • Mozzarella Cheese
  • Parmesan Cheese
  • Ricotta Cheese

HOW TO MAKE LASAGNA SOUP

  1. Prepare your castiron pot by preheating it on medium heat with 1 tablespoon of Olive Oil.
  2. Finely chop your onion, mince your garlic, and add them to the cast iron pot. Allow the onion and garlic to brown a little and then add in your fresh ground beef.
  3. Season beef with salt and pepper.
  4. Cook until ground beef is cooked through and no longer pink.
  5. Once the meat is cooked, add brown sugar, Italian seasoning, parsley, marinara sauce, water, and beef broth. Bring to a simmer.
  6. While bringing the soup to a simmer, mix together the mozzarella cheese, parmesan cheese, ricotta cheese, and salt, in a medium size mixing bowl, until all ingredients are combined.
  7. Once the soup is simmering, add two ice cream scoop sizes of the cheese mixture to the soup.
  8. Stir in the cheese until the soup has thickened up a little and the cheese has melted.
  9. Once the cheese has melted and the soup is simmering, add in your lasagna noodles.
  10. Simmer the soup for 14-16 minutes, stirring throughout the cooking process until noodles are al-dente or cooked to your liking.
  11. Serve soup up into bowls, top with more of the cheese mixture, a garnish of parsley, and a side of garlic toast.
  12. Enjoy!

Ingredients

  • 1 tbsp Olive Oil
  • 1 lb Ground Beef
  • 1 small Onion, chopped
  • 2 cloves Minced Garlic
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp Brown Sugar
  • 1 1/2 tsp Italian Seasoning
  • 1 1/2 tsp Parsely + garnish
  • 2 jars (650 mL) Marinara Sauce
  • 2 cups Beef Broth
  • 3/4 - 1 1/4 cup Water (depending on thickness of soup)
  • 2 cups Broken Lasagna Noodles or 3/4 - 1 Fusili Pasta or 3/4 -1 Maflada Pasta
  • 3/4 cup Mozzarella Cheese
  • 1/2 cup Parmesan Cheese
  • 1 cup Ricotta Cheese
  • Salt, to taste
